Bento #3

This was a stay at home meal, but easy to do in a bento box. I made egg salad for the face, sliced eggs and olives for eyes, red pepper mouths and the hair was grated carrot or chives. #3 wanted ears for his, so I sliced cucumber very thinly and added that to his. They pulled them apart to eat them, but they were gone in a flash.

  1. Hi, could you give me your egg salad recipe?

  2. Sure! It is crazy easy. Take your boiled eggs and run them through your egg slicer one way, and then the other so you have rectangles (or just use a knife and whack on them for a while). Add mayo, salt, pepper, and a tiny bit of mustard. If you are the type who needs a recipe, that would be about 1/4 c mayo for 4 eggs I think, and a 1/2 tsp mustard. My kids and I like green olives sliced up in there too, but if that is not your thing, leave them out... If it seems too dry with that ratio, add a bit more mayo. We like ours about the consistency of potato salad, bit dryer than not. Hope that helps!
