Bento #3

This was a stay at home meal, but easy to do in a bento box. I made egg salad for the face, sliced eggs and olives for eyes, red pepper mouths and the hair was grated carrot or chives. #3 wanted ears for his, so I sliced cucumber very thinly and added that to his. They pulled them apart to eat them, but they were gone in a flash.

  1. Sure! It is crazy easy. Take your boiled eggs and run them through your egg slicer one way, and then the other so you have rectangles (or just use a knife and whack on them for a while). Add mayo, salt, pepper, and a tiny bit of mustard. If you are the type who needs a recipe, that would be about 1/4 c mayo for 4 eggs I think, and a 1/2 tsp mustard. My kids and I like green olives sliced up in there too, but if that is not your thing, leave them out... If it seems too dry with that ratio, add a bit more mayo. We like ours about the consistency of potato salad, bit dryer than not. Hope that helps!
